Fried Eggplant

I saw a recipe on Brandi from Don't Disturb This Groove's blog for fried eggplant and thought,
I simply must try these... I was not disappointed, and neither was my 10 month old he ate two slices!



 I will be making these again tonight for meatless Thursday


If you enjoy eggplant and want a simple snack, give these a try!



Ingredients
1 large eggplant, sliced into 1/4 to 1/2 inch thick slices.
2 eggs, beaten
2 cups all-purpose flour
Salt and pepper to taste
Canola oil for frying
Marinara sauce, optional

Directions
Heat canola oil in a large skillet over medium-high heat.  Dip eggplant slices in egg, then in a separate bowl combine flour, salt and pepper.  Dredge each piece of eggplant in the flour, coating thoroughly and then shaking to remove any excess flour.  Fry eggplant for about 3 minutes on each side, or until golden brown. Transfer to paper towels to drain.  Serve with marinara sauce, if desired.

Brandi - These are delish! I want to get another eggplant right now and make more. I will probably make these very often since they are so easy and so tasty.

I love fried eggplant! :) I used to make eggplant parmesan fried in olive oil before changing my diet.

This post seriously came at the perfect time. This year I decided to plant eggplant in my garden for the first time and they've produced really well. I didnt grow up on eggplant, though so I have no idea how to prepare it! Being a southern girl I can appreciate fried anything recipe!! Im going to try this with the next eggplant I harvest. Thank you for sharing!
